Quesadillas and Super-quick Guacamole

This recipe came about simply because I had some sour cream to use up! These are really easy to make and only take about ten minutes.There's no chopping involved so they're great as something quick and satisfying when you get in from work or to make for friends coming over. The filling will keep in the fridge for 3 days; the guacamole will keep for 2 days.

Serves 4 (8 quesadillas)

For the quesadillas

1 pack of Quorn mince
1 tin of black beans
1 packet of taco seasoning
8 tortilla wraps
1 300ml tub of sour cream 
Grated cheese

For the guacamole

2 ripe avocados
Juice of 2 limes
Fresh coriander, chopped
Pinch of salt
Optional: tortilla chips to serve 

Method:

Heat the Quorn mince in a large pan for a few minutes (or if cooking from frozen, until completely defrosted). Drain and rinse the black beans and add them to the mince with the seasoning. Stir and let cook for a few minutes. 

In the meantime, make the guacamole: halve, de-stone and mash the avocado, then add the lime juice, coriander and salt to taste.

To put together the quesadillas, spread a spoonful of two of the mince and bean mixture over half a wrap. Spread sour cream and grated over the other half and fold the wrap in half. Cook in a large dry frying pan on each side until golden brown and crisp. They can be kept warm under the grill while the others are made.
