Wholewheat fusili | Mint and almond pesto | Pan-fried courgettes
The pesto recipe is from Hugh Fearnley-Whittingstall's 'River Cottage Veg Everyday', a really great vegetarian cookbook. I made it for the first time tonight and it turned out great. It's lighter and (dare I say it?) better than the classic basil pesto.
This meal, and the pesto recipe, is completely vegan.
